I suppose in this case since the images do not extend past the margins and the page color is pure white you could go with no bleed at 8.5 by 8.5.

The bleed is Accounted for in the beginning of the video at 40 seconds. Yes you do need to include the bleed.

Yes but everything has to be altered in some way. You Just can't use it as it is, change the font, change the background color, add some lines, characters, etc..

You can try but I've had extremely poor results using the image to video feature in Heiper. If studying from an existing image I would recommend using Runway ml or Pika labs.

No, the AI is not an issue, Amazon has updated their policies. Now they simply require you to disclose what AI was used and to what extent. Just be honest with the questions when you're uploading your book to KDP and you'll be all set!
